Simple Pasta with Fresh Basil, Garlic, Tomatoes and Vegan Parmesan


This pasta dish is as simple as it is flavorful and delicious!


In one tablespoon of olive oil, sauté six cloves of crushed garlic and two cloves of sliced garlic until fragrant.


Add two tablespoons of dried oregano; two stems of fresh thyme (stems removed); two T of red wine. Stir.


Add in one large can of organic whole peeled tomatoes (Bella Terra); several chiffonaded fresh basil leaves and freshly ground black pepper (and salt if desired).


Bring to a boil and then gently simmer with the lid half on for about 45 minutes or more. In the meantime boil your favorite pasta according to package directions.


I add in whole tomatoes to the tomato sauce to soften - combine with pasta.


Serve with plenty fresh basil and plenty Follow Your Heart Parmesan cheese.
