This is a nutritionally power-packed bowl that your body will love!
On a bed of black quinoa, I have added lots of fresh fruit and veggies, including shiitake mushrooms (sautéed in vegetable broth with fresh garlic), and baked sweet potatoes. The whole bowl is oil-free, drizzled with a homemade cashew dressing.
Ingredients:
Quinoa
Raw butternut zoodles
Red beans
Mushrooms assorted
Kale
Avocado
Endive
Baked sweet potatoes
Purple daikon radishes
Microgreens
Blood oranges
Sunflower sprouts
Nuts
Hemp seeds
Dressing :
1 cup raw cashews
3/4 cup water
2 cloves garlic
3 tsp German mustard
2-3 Tbs lemon juice
1/2 tsp Apple cider vinegar
Soak the cashews in hot water. Drain and then blend all ingredients.
