This no-bake, 100% raw, chocolate panna cotta dessert is out of this world and so easy to make! I find this to be creamier and richer than most baked desserts.
1 cup raw unsalted almonds
1/2 cup rolled oats
2 Tbs melted coconut oil
3 Tbs maple syrup
2 Tbs cacao powder
4 pitted Medjool dates
In a food processor, pulse almonds until fine. Add the oats and pulse again. Add remaining ingredients and pulse until a ball forms once blended. Firmly press into a removable bottom pan. Place in the freezer to set.
1.5 cups full fat coconut cream - (about one can full fat coconut cream - I try add the solid cream and leave the bit of coconut water in the can which = one and a half cups)
1 cup oat milk
2 Tbs pure maple syrup
250 g semi sweet vegan chocolate
2 tsp Agar powder
In a saucepan bring the coconut milk, oat milk and sweetener to a boil. Turn down heat and add the melted chocolate. Stir. Add the Agar powder and whisk until dissolved. Pour filling and place in the fridge or freezer to set. Decorate with fruits of your choice. (Inspired by @nm_meiyee)
